Fresh calf liver placed on skewers. Barbecued over a charcoal fire. Seasoned with salt and pepper and a dash of lime juice.

Served with warm flat bread, yogurt and green onions.

Fresh liver... it's tasty and good for you because it contains loads of iron.

Jegar means "liver" in the Persian language or Farsi (Arabic pronunciation of Parsi).


Ingredients

  1. Fresh calf liver - 1 lbs.
  2. Salt
  3. Pepper

Directions

  1. Heat barbecue fire until charcoal turns ash white.
  2. Cut liver into thick strips and arrange on skewers.
  3. Grill over burning coals for 2 minutes on each side.
  4. Remove skewers from grill, place in between warm flat bread, press down and remove the skewers.
  5. Sprinkle with a pinch of salt and pepper.

Notes:

  1. Serve alongside yogurt and green onions.
