Jujeh Kabob

Iranian style juicy chicken pieces marinated in onion and lemon juice. Placed on skewers and grilled over a charcoal fire or broiled in the oven. Basted with saffron butter mixture.

Served with steamed rice and grilled tomatoes on the side.

For best results use wider than usual metal skewers. Cook beef over charcoal fire. Heat coals until they are ash gray.

Kabob means 'barbecue' and Jujeh means 'little chick' in the Persian language or Farsi (Arabic pronunciation of Parsi).

Ingredients

  1. Chicken - 2 1/2 lbs
  2. Onion - 1 medium finely grated
  3. Salt - 2 teaspoons
  4. Saffron - 1/8 teaspoon
  5. Butter - 4 tablespoons
  6. Lemon juice - 1/2 cup

Directions

  1. Cut chicken into medium sized pieces or strips.
  2. Grate onion and squeeze the juice into a bowl.
  3. Add lemon juice and seasonings and mix well. Add chicken strips and marinate at room temperature for a few hours or leave overnight in the refrigerator.
  4. Dissolve saffron with a bit of warm water, blend with melted butter.
  5. Preheat oven broiler on high heat
  6. Place strips of chicken on skewers, suspend skewers across a roasting pan deep enough to catch juices and place in the oven turned down to medium heat.
  7. Or light charcoal fire, let coals burn until they are ash white before placing skewered chicken on grill.
  8. Frequently flip the skewers and baste chicken with saffron butter mixture.
  9. Chicken is done when juices turn from pink to either clear or a yellow color.

Notes:

  1. Serve with steamed rice alongside barbecued tomatoes, and a large spoonful of thick yogurt.
