Iranian style Cabbage Rolls with Beef

Hearty Persian style baked or broiled cabbages stuffed with meat, rice and vegetables.

Cabbage is an excellent source of vitamins K and C: Boiled cabbage contains 91% of the RDA for vitamin K and 50% for vitamin C.

Cabbage is also a very good source of dietary fiber, manganese, vitamin B6 and folate, and a good source of thiamin, riboflavin, calcium, potassium, vitamin A, tryptophan, protein and magnesium.

Kalam means 'cabbage' in the Persian language or Farsi (Arabic pronunciation of Parsi).


Ingredients

  1. Ground-beef - 1 pound (lean)
  2. Cabbage - 1 head
  3. Rice - 1/3 cup
  4. Yellow split peas - 1/4 cup
  5. Onion - 1 medium (grated)
  6. Parsley - 1/2 cup
  7. Cinnamon - 1/2 teaspoon
  8. Sugar - 1/3 cup
  9. Salt - 1 teaspoon
  10. Pepper - 1/4 teaspoon
  11. Butter - 2 tablespoons
  12. Oil - 1 tablespoon
  13. Vinegar - 1/3 cup
  14. Water - 1 cup

Directions

  1. Boil yellow peas in water until tender but still firm, drain water and place in a large bowl.
  2. Boil rice in salty water until tender but still firm, drain water and add to peas.
  3. Sauté onions in butter, remove them from frying pan and add to rice and peas.
  4. Place sugar and vinegar in the frying pan with the remaining butter, mix thoroughly and set aside.
  5. In a large bowl place raw ground-beef, peas, rice, chopped parsley and seasonings and mix thoroughly together.
  6. Remove leaves from cabbage one by one, boil in salty water for a few moments.
  7. Remove cabbage leaves from boiling water, careful not to break leaves when gently draining excess water.
  8. Spread a cabbage leaf flat out on a cutting board, place a handful of mixture in the center.
  9. Either roll or fold the leaf so as to contain the mixture.
  10. Place oil in a large casserole dish, place left over cabbage leaves on the bottom.
  11. Arrange cabbages rolls in neat pile in the casserole dish.
  12. Pour sugar and vinegar solution over top.
  13. Place casserole dish in the over in high heat for 30 minutes or cook in a pot, on low heat for 45 minutes.

Notes:

  1. Serve hot alongside a meat dish.
